Austrian Kaiserschmarrn

Emperor’s mess in other name. It was dedicated to Emperor Franz Josef. A royal dessert with simple ingredients and so easy to make. Basically a huge shredded fluffy american pancake with some fruit sauce.

Ingredients and Instructions:

For 1 serve

  • 2 egg yolks
  • 20 g sugar
  • 100 g flour
  • 100 ml milk
  • vanilla
  • 2 egg whites
  • pinch of salt
  • 50 g butter
  • icing sugar
  • fruit sauce or jam

Mix well the yolks with the sugar and vanilla then add the flour and the milk.
Whisk the egg whites with a pinch of salt till it’s hard and fluffy.
Gently fold the egg white with the egg yolk mixture.
Heat the butter in a non-stick frying pan over medium heat, and when it’s bubbling, pour the mixture into it. Fry it for 3 minutes. Check the underside if its golden brown, then flip it over. Don’t worry if it’s break.
Fry the other side for 3-4 minutes until it’s golden brown and cut the pancake into smaller pieces with a spatula. Turn up the heat a little higher and fry the pieces. Continuously stir them with 2 spatula.
When the dessert is crispy and brown, place it to a nice plate and sprinkle the top with icing sugar. Best served hot with apple sauce.
